I'm using blur. It just blurs the fanart/default background.

In my setup, I have the Movies tab set with a smart playlist via a widget. The information for these movies automatically moves on to the next one but the background is just the mountains pic instead of the pic of the movie. When I press right, the fanart appears and the current film in the widget is highlighted. No way to just have the fanart automatically or am I just being a bit thick?

It shows the fanart for whatever you have focused, so if you have the menu focused, it'll show the fallback image you've set in the skin

Both not.. I am using Emby for Kodi and synchronised all my movies to Kodi Library

The information for some of my movies is not being scraped correctly. For instance; I've got the 2015 movie Legend in my library but the information shown is that from the 80's version of a movie with the same title (I stored the movie as 'Legend (2015).mp4'). Obviously I can adjust that and manually refresh the info for that particular movie which works fine and the correct poster/fanart/info/etc. is shown, but after a reboot or (perhaps) library scan it's showing the old (and wrong) information again.

Unlikely to be a skin issue. Probably just a coincidence that it started happening at the same time.

How do you reboot? Do you use the built in Kodi function? Often times Kodi needs to exit correctly for the database to finish writing - if you reboot by doing a power cycle instead then sometimes things don't get written to db.
