I am using plexbmc and would like to change the shortcut of the movie and tv shows folder.

Well depends on how you look at it. If I can change the shortcuts of the Kore app to the plexbmc plugin movie and shows folder it's in the right forum section.
I could also try customizing the default movie and tv shows shelves of Kodi. This is no solution as the addon plexbmc uses it's own movie and tv shows folder, so I have to customize it in the Kore app.

It says on github this is already implanted https://github.com/xbmc/Kore/issues/201 , but I can't find it anywhere in the app...

That relates to the bottom bar shortcuts, which can be defined in the settings (in the current versions of Kore, not the one in Google Play).
