If you have Zattoo PVR as your enabled PVR in Kodi (Matrix) then yes you will be able to select and record an individual channel programme from the presented EPG.
Basically you move over programme item of interest and then use keyboard “C” = Contextual menu (or via equivalent remote method?) to perform additional context tasks, one of which is the record option.
Once record is requested programme will appear in your Recordings once programme has finished. (If you select something that is already finished, it will appear in your recordings immediately)
To perform "Record Series" rather than just the selected programme item; as far as I am personally aware this is not currently available in Kodi (Matrix) for Zattoo PVR, although this can be achieved by accessing Zattoo via a your PC, tablet, phone Web Browser.
Then watch saved recordings in Kodi.
