Is it possible to add more views to default Kodi skin, without having to install other skins? I’m missing more views for some addons, like Wall Thumbnails? I can only see Wall Posters… is it doable with some addon?

With an add-on? No. You would have to use the Kodi skinning engine (which is, in essence XML) to create the new views. You might be able to start with the XML of a view from another skin, but it would likely take significant work to get it functional in Estuary. Basically you'd need to modify the Estuary skin.
