Does WMC name all files as Show Title-Channel Name-Date/Time of recording?  I've selected Append episode title to series title for recording using: Title Episode in the recordings tab of Server WMC.  Am I missing something?  Do I need to do something else.  Can I name the files any way I want and if so how?  Thanks alot.

WMC always names the files as you specified.  Appending the episode title to the series title only effects how recordings are displayed in kodi's recorded tv list, it does not effect the wtv file name.  Yes, you can name the files anything you want, it does not effect wmc or kodi.
