Is there any way to define a global view for Movie Sets? Seems like I need to manually define the view for every single set in my collection with all Aeon MQ skins, these days...

Yes, in the top menu there is a button named "ENABLE FORCED VIEWS" that will allow you to set a specific view for different content.
