As the subject says, I have audio but no video when attempting to use Kodi on CarPlay, I am using the nightly build of Kodi 20, I was also facing this issue with version 19.4 and I also get no video on iPhone screen

The inability to watch videos using Apple CarPlay is a safety feature, no apps will give you video, it's not an issue with Kodi. From what I understand there are third party solutions out there that circumvent this but that discussion is beyond the scope and remit of this forum.

I understand the safety feature but it was fine a few versions ago, I can’t remember which though and for a time it did work on 19.4

What's your tweak? CarBridge?
If you use CarBridge, maybe try the Mirror mode (Portal mode if I remember correctly) and not the bridged mode.
In my memories, CarPlay supports only some codecs, this is why you only have audio on some videos.
