Any idea what would cause the Kodi remote to drop out mid movie and sometimes be working on the iPad but not on the iPhone 11?

I guess you refer to the Official Kodi Remote for iOS. There is no difference between the connection of iPad or iPhone to the Kodi server, just the UI is different. Can you explain in more detail what you observe "drop out mid movie"?
One general comment: The app will disconnect when it goes to background mode (when the iOS device's screen locks or when another app moves to foreground). You can let the app avoid screen lock in the app settings. In this case the app will stay connected.

I’ll be watching a movie and want to pause it but the iPhone lost connection and won’t reconnect sometimes and the iPad could be fine and connected.

Both iPhone and iPad have been in screen lock before you attempt to pause the movie? Does the iPhone not re-connect automatically, or does it also not re-connect when manually triggering a re-connect?

Yes they’ve been in screen lock. More often is the issue that the movie is paused and then the phone looses connection. So it’s not in locked screen and won’t reconnect whilst the iPad dosnt loose connection.
When trying to reconnect,the iPhone won’t reconnect automatically nir manually.
I have tested this with an additional iPhone and both have lost connection whilst the iPad remained connected or at least reconnected automatically though not always, sometimes after multiple manual attempts.
Could it be loss of WI-FI signal strength? My teahtre room has high levels of insulation.
