I starter my first XBMC setup on an old computer I had lying around. It is an AMD 3200+ with 1 gig of ram and a BFG 7950 GT OC. It runs well but it struggles on some of the skins (slow to load movie posters or more so fan arts). It also stutters a lot streaming 1080p from something like the CBS plugin.
As far as being able to load the fanart/posters and what not quicker when browsing through the library would going to 2gig of ram make much of a difference? I really did not want to spend any money on this system but this is something I could do pretty cheap if it will help.
