Kodi 16.0 installed on an iMac running OS X 10.9.5
an updated version of Kore running on OnePlus Two device.
Both run on home wifi network.

I follow the instructions precisely but it keeps saying "couldn't connect, check configuration" message.
What could I be missing?

Very coincidental I am using OnePlus 2 and having issues connecting to Kodi on Windows 10.

It connects 2/10 times. Sometimes it may work for a while without problems. Sometimes you won't be able to connect even after 50 tries.

In my old house I had a good Asus router, and never had any connection problem using the same OP2 phone though.
In my new house I have some defsult Technicolor crap modem by Ziggo/UPC (Dutch provider), since then I'm experiencing difficulties with Kore.
