Sorry it took a while to get back to this, but thanks for the suggestions.  Sadly, I just tried all 3 and none of them worked.  If you have any other ideas, let me know.

@jjd-uk Just curious why you don't think this is an appropriate use for sort tokens?

Because sort tokens need as delimiter to separate what you want the remove and what you want sort by, where the delimiter is usually a space or apostrophe after the sort token. However in your case the apostrophe has nothing before it so Kodi probably doesn't see it as a valid sort token or delimiter. Probably the best for these is to specify a Sort Title e.g. Twas.

In case you aren't aware of Sort Title

Default position uses apostrophe

Go to Manage on Context Menu

Select Edit sort title

Remove apostrophe beginning

Now sorted by T however title in UI is unchanged so still displays the apostrophe. Hence Sort Title is a secondary titles used only for sorting leaving the movie title to be displayed unchanged, Can be used in all kinds for cases to force a particular sort order.

Note: if you don't want the apostrophe displayed at all then use the Edit title option to changed title displayed in the UI as well as what's used for sorting.
