When I see a film with multiple audio stream, I have to do several (at least 5) steps to switch from an audio stream to another one.
There is not a quick way (customizing the Octagon sf8008 remote control, i.g.) to toggle audio stream (with one step)?

You triggered my curiosity and i think this can be easily accomplished.
'leftquote' seems to be the shortcut to toggling audiostream.
You could map this to any key on your rc and toggle away.
Just tested it as I have some channels with multiple audio tracks. Works like a charm. And thanks for this, I think I'll leave it in place (I mapped it with the keymap editor addon for comfort )

Can you explain exactly on how and where you run Kodi?

If you are running Kodi on an enigma2 device, then we can’t really help you here as Kodi that runs on E2 has been heavily modified and ids not supported here.

However if you run Kodi on a supported device, then you will have the ability to connected a keyboard, and therefore also map that key to a remote control.

I have OpenATV 7.3 as operative system. I guess that is enigma2, isn't it?

Correct, so a keyboard might work, but we don’t really know. I would just try it and see if it works.

As far as configuring your remote goes that is also an unknown.
