just rename xbmc default.xbe to evoxdash.xbe and overwrite it on your xbox hd.
upload all xbmc needed files in the root folder of your c:\ drive (xbox)...

in the xbmc config xml file there are some ip settings that say leave blank to use evox's info, if i leave them blank will it for sure grab a ip from my dhcp server? i don't want to have to reinstall evox if this ruin's my xbox's setup. whats the worst that can happen? i have to put my evox disk in the drive and reinstall it again or would i have to take my hdd out and connect to my pc again?

if i were you, i'd wait until xbmc can be used as a dash. just wait until v1.0 (or whatever the release version will be) is out.
