I'm not, I run the global update every 6 months or so to update those IMDB ratings.
Then every time I have to add something, I select "Add to Library" under Files.

So I would select movie_50 in this example because its new and select "Add to Library"
This way there is no need to scan its parent folder 'movies' because that just takes forever.

One of the ways to make scanning quicker is to have multiple sources, then using the sideblade menu in file mode you can choose 'scan for new content' for just the one source that contains the new additions. If you already have created the .nfo with a 3rd party application, the scan will be local and fast as a background task.

Absurd, scanning thousands takes a few minutes on my system, individual folders seconds. But scanning with a scraper takes time (web calls), my suspicion is that you have issues in nomenclature and .nfo files that Kodi doesn't understand, then reverts to a scrape on a lot of files. A proper debug log in a support thread elucidating the issue with some descriptive hardware set-up may offer a solution.
