Is there a way to pause video without showing GUI? Or close GUI when video paused?

The RPi3B+ has no onboard h265 decoder, so no Kodi version for it has hw acceleration support. Everything needs to be done via a combination of generic GPU tools and a couple of software tricks, which only goes so far. It can process most 720p HEVC videos, as well as mediocre bitrate 1080p HEVC video files. But that's it. RPi4 availability should be better this year.
Kodi 19 for the RPi3 is broken, because in LibreELEC new video driver techniques have been chosen/implemented for a better overall support of various hardware/chipsets. Programming for new hardware should be easier, the RP3B+ is simply EOL in that regard.
