I'm not looking to stay up to date with the bleeding edge features or modds, just get the most stable release of Aeon available.

Can i use the 10.1 'Dharma' stable build and get Aeon as an odd-on?

Or do i need the nightly build?

Yes you can use Aeon Nox with Dharma10.1. It's available from the add-ons section under the section Skins.
