I see that Metropolis has a Kiosk mode. I want to limit the access to 'files' only. So I checked the box.
But how do I set to what the user is limited?

Kiosk mode prevents the user from changing views in each section. If you want it set to Files, then first do that and then enable Kiosk.
Unless I'm not understanding what you're trying to do?

I was hoping I could force XBMC to only show a specific folder in my files menu.

Sorry, but that's not (to my knowledge) currently possible.
